A self-proclaimed "flavor guy," winemaker David Hopkins strives to bring out rich and distinctive flavors in his wines.

Never one to succumb to convention, David Hopkins "follows the flavor" wherever it may lie. With more than 20 vintages behind him, David knows how to find the best grapes from the Central Coast's diverse vineyards. When it comes to blending, he considers how each element - vineyard climate, winemaking techniques, barrel aging - will ultimately contribute to the flavor in the glass.

"Most of the grapes for our wines come from cool-climate vineyards that are within 50 miles of the ocean, but each vineyard has a special attribute that sets it apart from the others," says David. "I get the best of the best, and then I blend to the flavors, not the appellation."
